In nature, no two things are ever exactly the same.

Even fruit grown on the same land and by the same hands can take on entirely different expressions depending on the climate, temperature, age of the trees, and the passage of time in each particular year.

The same is true of wine and cider. There is no single “right” answer.

Each year, we encounter a different character. We observe it carefully, care for it, and continue the conversation. Through this accumulation of experience, what we call intuition and sensibility gradually begins to grow.

Fermentation is not something we control.
The yeasts that already exist there begin to move on their own, interacting with one another and creating something new. All we can do is quietly watch over those changes.
